Marlow’s Savannah By Hellcat
Editor’s Note: Marlow returns this morning to his exploration of new roots in a new town older that our Independence. As you may have noticed, there are other versions abroad in this great land. Socotra House LLC prefers this one. The Savannah dining tradition is as old as the city, and it is magical. The President’s Press Secretary tells us that Independence Day meals are nearly 16-cents cheaper this year, a major accomplishment. Here at the farm, the local chapter of the Commemorative Air Force is flying some old steel bids from a war long ago. The roar of ancient engines fills the sky with what was once- and is this morning- The Sound of Freedom. So let us push that throttle forward and ease the stick to port to cock the starboard wing up in triumph and celebrate!

Author’s Note: To start off the second half of 2021, we took the Hellcat out Thursday for an extended back country spin and a fresh seafood lunch in Darien and its live oak trees “have right away” back streets (see attached).
Lunch at the Fish Camp was local oysters, homemade cheese grits and mac-n-cheese.
On our circuitous route home. we found, by pure chance, a small, off the main road, first-class butcher shop, Ogeechee Meat Market, just south of the Flea Market cow on US 17. They had a boatload of custom made and locally sourced seafood, meat and other sausages, unbelievable cuts of pork, beef, lamb and fowl plus crab, oysters, shrimp etc. Next door was another unknown-to-us-until-then carniceria replete all the South and Central American meats, fresh and marinaded, plus spices and vegetables that were quite legit for these American melting pot cuisines.
We came home with a whole duck. We also bought duck legs for a cassoulet this month.
Crab and steak dinner is in our boresights. Seafood sausages too!
Despite some national TV anchors solely referring to this birthday weekend as another “long weekend,” life is good.

PS: This throwback butcher place has Country Hot and Mild sausages, including Ghost Pepper, Beirwurst, Boudin, and Chili Cheese, Vidalia Onion, and things like Blueberry Maple breakfast links. Also made are custom bacon without nitrates or chemicals, using both Boston butt pork and pork belly to create texture and flavor in assorted flavors like Maple, Slab, English, Peppered, Rindless, Double Smoked, and Sugar-Free (yes, it exists). They even had Lamb Bacon.
But wait, there’s more. Also available are house-made uncured all-beef hotdogs with natural casings plus a range of flavors including, but not limited to, original pepper, sage, Korean BBQ, sweet teriyaki and ranch chipotle.
The market has its own Smokery on the premises, where a trained Smokeologist smokes everything from beef brisket and salmon to sausages and turkey with hickory.
